Sneaking in the veggies!

After a long week we decided just to stay home tonight and have a relaxing Saturday night.  Joe chose reading and I will most likely stumble and pin things to pintrest.  We might be getting old!

A couple of weeks ago I realized we haven't been getting as many raw veggies in our diet as we should so I decided that we would have a salad with one of our meals each day.  We've been doing really well with munching our greens the last two weeks but tonight we just weren't in the mood for a salad.  Actually something like nachos sounded so much more appetizing.

I figured we could still get some veggies in tonight's dinner and make our nacho's a bit healthier by adding some corn, kale, avocado and salsa to make them vegetarian supremos. They ended up being delicious.


Tortilla Chips
1 can black beans (rinsed)
1/2 cup Chopped onion
2 Tbs minced garlic
1 cup sweet corn ( my favorite is trader joes frozen sweet corn)
2 cups baby kale or spinach
Sour cream
Hot sauce
Olive oil

Heat up 1 Tbs of olive oil in a medium pan add onions when oil is hot.  Saute for 2-3 minutes add garlic and black beans and cook for 3 minutes just until warm. Add in corn and cook for about 2 minutes.  Everything should be nice and hot now.  Add in kale and spinach and mix around until they are just wilted.

Put however many chips you are in the mood for on a plate and sprinkle cheese on top.  If you want to make them a little healthier ( like me) than just add a small amount of cheese and microwave for 30 seconds...there are so many other flavors and toppings you won't even miss the extra cheese. (most of the chips we had  were crunched but I found this to be a perfect recipe to use them up.  Just add the toppings and eat with a fork)

After melting the cheese evenly spread out the veggie bean mixture over the chips and then top with salsa, avocado, sour cream and hot sauce.

In the past I've added mushrooms and quinoa to my veggie mix, really yummy and you sneak in even more veggies and protein.
