Broccoli Salad


This summer I started shopping at Costco and two of my favorite purchases each time I go are the 5 lb bag of organic baby carrots and the 3 lb bag of broccoli florets. Maybe I'm a little lazy but I love how easy it is just to grab them out of the bag and not have to peel or cut off the stem. The best part is how much more I'm eating salads.

I came up with this recipe when I was all out of spinach, kale and lettuce and surprising it is now one of my favorite things to have for lunch.  It only takes a few minutes to make, fills me up and allows me to get lots of vitamins and healthy fats.

It has so few ingredients but when you mix them all together the flavor is yummy and so much more appetizing then just eating some raw carrots and broccoli. 

The other funny thing about this salad is it helps me slow down when I'm eating. There is just no way to eat raw veggies in a hurry and slowing down when I eat is something I always need to practice.  




Ingredients
1 - 1 1/2 Cups Broccoli
10 Baby Carrots
2 Tbsp Onion
2 Tbsp Raisins
2 Tbsp Sunflower Seeds
1 Tbsp Feta Cheese
2 Tsp Olive Oil
Dash of Cayenne Pepper ( I add a few dashes, I love spicy)
Dash of Black Pepper



Directions

Chop the carrots, broccoli and onions into small bite size pieces and put in a bowl. Top with raisins, sunflower seeds and feta cheese. Sprinkle a little cayenne and black pepper on top and then pour the olive evenly over top.  Mix together and you are all set.

* I normally don't measure out the amounts.  I just put a little of this and a little of that but thought I would measure today just so I could give others and idea of how much to add
